Ingredients:
- 2 lbs beef stew meat, cut into 1-inch cubes
- 2 tbsp vegetable oil
- 1 tsp salt
- 1 tsp cracked black pepper
- 1 tsp garlic powder
- 1/2 cup beef broth
- 1/2 cup unsalted butter, melted
- 4 cloves garlic, minced
- 3/4 cup freshly grated Parmesan cheese
- 1 tbsp fresh parsley, chopped
Instructions:
- Pat the beef cubes completely dry with paper towels. Season with salt, pepper, and garlic powder.
- Heat vegetable oil in a skillet over medium-high heat until shimmering. Sear the beef in batches until a deep brown crust forms on all sides, then transfer the seared beef to the slow cooker.
- Pour the beef broth into the bottom of the slow cooker to deglaze any browned bits. Stir the beef gently to coat.
- Cover and cook on Low for 3 to 4 hours (or High for 2 hours) until the meat is tender.
- Switch the slow cooker to the 'Warm' setting. Stir in the melted butter and minced garlic.
- Gradually fold in the grated Parmesan cheese, stirring until the sauce is smooth and clings to the beef.
- Garnish with fresh parsley just before serving.
