Ingredients:
- 1.5 lbs sirloin steak, cut into 1-inch cubes
- 1 lb Yukon Gold potatoes, cut into ½-inch cubes
- 2 tbsp olive oil
- 1 tsp kosher salt
- ½ tsp black pepper
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 tbsp fresh parsley, finely chopped
- ¼ tsp red pepper flakes
Instructions:
- Cube the sirloin steak into 1-inch pieces and Yukon Gold potatoes into ½-inch pieces to ensure even cooking.
- Toss steak and potatoes in separate bowls with salt and pepper immediately before cooking.
- Heat 1 tbsp olive oil in a 12-inch cast iron skillet over medium-high heat until shimmering.
- Add potatoes in a single layer and sear undisturbed for 3-4 minutes to develop a golden-brown crust; stir and cook for another 5-7 minutes until tender, then remove from pan.
- Add the remaining 1 tbsp olive oil to the skillet and increase heat to high.
- Sear steak bites in a single layer for 1-2 minutes per side until a deep mahogany crust forms, then return the cooked potatoes to the pan.
- Reduce heat to medium and add unsalted butter and minced garlic.
- Toss steak and potatoes constantly for 1-2 minutes until the butter foams and coats the ingredients in a glossy glaze.
- Remove from heat and stir in fresh parsley and red pepper flakes.
