Ingredients:
- 1.5 lbs (680g) mixed mushrooms (cremini, button, oyster, shiitake), cleaned and quartered or sliced
- 6 tbsp (85g) unsalted butter, softened
- 6 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh thyme leaves
- 1 tbsp soy sauce
- 1 tbsp lemon juice
- 1/2 tsp smoked paprika
- 1/4 tsp red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- 2 tbsp olive oil
Instructions:
- Preheat oven to 400°F (200°C).
- In a small bowl, combine the softened butter, minced garlic, parsley, thyme, soy sauce, lemon juice, smoked paprika, and red pepper flakes (if using). Mix well.
- In a large bowl, toss the cleaned and cut mushrooms with olive oil, salt, and pepper.
- Spread the mushrooms in a single layer on a baking sheet. Roast for 10 minutes.
- Remove the baking sheet from the oven. Evenly distribute the garlic butter over the mushrooms.
- Return the baking sheet to the oven and continue roasting for another 10-15 minutes, or until the mushrooms are tender and browned, and the garlic butter is melted and bubbly.
- Remove from oven and serve immediately. Garnish with extra fresh parsley, if desired.
