Ingredients:

  • 1.5 lbs (680g) mixed mushrooms (cremini, button, oyster, shiitake), cleaned and quartered or sliced
  • 6 tbsp (85g) unsalted butter, softened
  • 6 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme leaves
  • 1 tbsp soy sauce
  • 1 tbsp lemon juice
  • 1/2 tsp smoked paprika
  • 1/4 tsp red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • 2 tbsp olive oil

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, combine the softened butter, minced garlic, parsley, thyme, soy sauce, lemon juice, smoked paprika, and red pepper flakes (if using). Mix well.
  3. In a large bowl, toss the cleaned and cut mushrooms with olive oil, salt, and pepper.
  4. Spread the mushrooms in a single layer on a baking sheet. Roast for 10 minutes.
  5. Remove the baking sheet from the oven. Evenly distribute the garlic butter over the mushrooms.
  6. Return the baking sheet to the oven and continue roasting for another 10-15 minutes, or until the mushrooms are tender and browned, and the garlic butter is melted and bubbly.
  7. Remove from oven and serve immediately. Garnish with extra fresh parsley, if desired.
