Ingredients:

  • 2 lbs (900g) Yukon Gold potatoes, or red potatoes, cut into 1-inch (2.5cm) chunks
  • 1/4 cup (60ml) olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, freshly ground, or to taste
  • Optional: 1/4 cup (packed) fresh parsley, chopped, for garnish

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Wash and cut potatoes into roughly uniform pieces. Pat dry with paper towels.
  3. In a large bowl, combine olive oil, minced garlic, rosemary, thyme, paprika, salt, and pepper.
  4. Add the potatoes to the bowl with the garlic herb oil and toss thoroughly to coat evenly.
  5. Spread the potatoes in a single layer on a baking sheet, ensuring they are not overcrowded.
  6. Roast for 40-50 minutes, or until the potatoes are tender and golden brown, flipping halfway through for even cooking. The key is perfect Garlic Herb Roasted Potatoes!
  7. Remove from oven, garnish with fresh parsley (if using), and serve immediately.
