Ingredients:
- 2 lbs (900g) Yukon Gold potatoes, or red potatoes, cut into 1-inch (2.5cm) chunks
- 1/4 cup (60ml) olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, freshly ground, or to taste
- Optional: 1/4 cup (packed) fresh parsley, chopped, for garnish
Instructions:
- Preheat oven to 400°F (200°C).
- Wash and cut potatoes into roughly uniform pieces. Pat dry with paper towels.
- In a large bowl, combine olive oil, minced garlic, rosemary, thyme, paprika, salt, and pepper.
- Add the potatoes to the bowl with the garlic herb oil and toss thoroughly to coat evenly.
- Spread the potatoes in a single layer on a baking sheet, ensuring they are not overcrowded.
