Ingredients:

  • 4 tbsp (57g) unsalted butter, cold and cut into cubes
  • 2 cloves garlic, minced (about 1 teaspoon)
  • 2 tbsp dry white wine (such as Sauvignon Blanc or Pinot Grigio)
  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh chives
  • Pinch of red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • Seafood of your choice (such as Shrimp, Lobster, Crab, etc.)

Instructions:

  1. Mince garlic, chop herbs, cube butter, and juice the lemon.
  2. Melt 1 tbsp of butter in a small saucepan over medium-low heat. Add the minced garlic and red pepper flakes (if using) and sauté until fragrant (about 1 minute), being careful not to burn.
  3. Pour in the white wine and bring to a simmer. Cook until the wine reduces slightly, about 2 minutes.
  4. Stir in the lemon juice and simmer for another minute.
  5. Reduce the heat to low. Begin whisking in the cold butter, one cube at a time, allowing each cube to melt completely before adding the next. Important: Maintain a low heat to prevent the sauce from breaking.
  6. Once all the butter is incorporated and the sauce is smooth and glossy, stir in the chopped parsley and chives.
  7. Season the sauce with salt and freshly ground black pepper to taste. Drizzle immediately over your prepared seafood.
