Ingredients:
- 4 tbsp (57g) unsalted butter, cold and cut into cubes
- 2 cloves garlic, minced (about 1 teaspoon)
- 2 tbsp dry white wine (such as Sauvignon Blanc or Pinot Grigio)
- 2 tbsp freshly squeezed lemon juice
- 1 tbsp chopped fresh parsley
- 1 tbsp chopped fresh chives
- Pinch of red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- Seafood of your choice (such as Shrimp, Lobster, Crab, etc.)
Instructions:
- Mince garlic, chop herbs, cube butter, and juice the lemon.
- Melt 1 tbsp of butter in a small saucepan over medium-low heat. Add the minced garlic and red pepper flakes (if using) and sauté until fragrant (about 1 minute), being careful not to burn.
- Pour in the white wine and bring to a simmer. Cook until the wine reduces slightly, about 2 minutes.
- Stir in the lemon juice and simmer for another minute.
- Reduce the heat to low. Begin whisking in the cold butter, one cube at a time, allowing each cube to melt completely before adding the next. Important: Maintain a low heat to prevent the sauce from breaking.
- Once all the butter is incorporated and the sauce is smooth and glossy, stir in the chopped parsley and chives.
- Season the sauce with salt and freshly ground black pepper to taste. Drizzle immediately over your prepared seafood.
