Ingredients:

  • 3 cups (270g) rolled oats (not instant)
  • 1 cup (100g) chopped nuts (almonds, walnuts, pecans, etc.)
  • 1 cup (150g) dried fruit (raisins, cranberries, chopped apricots, etc.)
  • 1/2 cup (50g) shredded coconut (optional)
  • 1/4 cup (30g) seeds (sunflower, pumpkin, chia, flax, etc.)
  • 1/2 teaspoon (3g) ground cinnamon
  • 1/4 teaspoon (1.5g) salt
  • 1/2 cup (120ml) honey
  • 1/2 cup (113g) unsalted butter, melted
  • 1/2 cup (100g) packed light brown sugar
  • 1 teaspoon (5ml) vanilla extract

Instructions:

  1. Preheat the oven to 325°F (160°C). Line a 9x13 inch baking pan with parchment paper, leaving an overhang.
  2. In a large mixing bowl, combine the oats, nuts, dried fruit, coconut (if using), seeds, cinnamon, and salt. Toss to combine.
  3. In a small saucepan over low heat (or microwave), combine the honey, melted butter, and brown sugar. Heat, stirring, until sugar dissolves. Remove from heat and stir in vanilla.
  4. Pour the wet ingredients over the dry ingredients and stir well to coat evenly.
  5. Transfer the mixture to the prepared baking pan. Press firmly and evenly into the pan.
  6. Bake for 25-30 minutes, or until the edges are golden brown.
  7. Remove from the oven and let cool completely in the pan. Use the parchment paper to lift the bars out and cut into 12 bars.
