Ingredients:
- 3 cups (270g) rolled oats (not instant)
- 1 cup (100g) chopped nuts (almonds, walnuts, pecans, etc.)
- 1 cup (150g) dried fruit (raisins, cranberries, chopped apricots, etc.)
- 1/2 cup (50g) shredded coconut (optional)
- 1/4 cup (30g) seeds (sunflower, pumpkin, chia, flax, etc.)
- 1/2 teaspoon (3g) ground cinnamon
- 1/4 teaspoon (1.5g) salt
- 1/2 cup (120ml) honey
- 1/2 cup (113g) unsalted butter, melted
- 1/2 cup (100g) packed light brown sugar
- 1 teaspoon (5ml) vanilla extract
Instructions:
- Preheat the oven to 325°F (160°C). Line a 9x13 inch baking pan with parchment paper, leaving an overhang.
- In a large mixing bowl, combine the oats, nuts, dried fruit, coconut (if using), seeds, cinnamon, and salt. Toss to combine.
- In a small saucepan over low heat (or microwave), combine the honey, melted butter, and brown sugar. Heat, stirring, until sugar dissolves. Remove from heat and stir in vanilla.
- Pour the wet ingredients over the dry ingredients and stir well to coat evenly.
- Transfer the mixture to the prepared baking pan. Press firmly and evenly into the pan.
- Bake for 25-30 minutes, or until the edges are golden brown.
- Remove from the oven and let cool completely in the pan. Use the parchment paper to lift the bars out and cut into 12 bars.
