Ingredients:
- 1 ½ cups (192g) all-purpose flour, plus a little for dusting
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup (113g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ¾ cup (177ml) Grape Soda (like Fanta Grape)
- 1 cup (226g) unsalted butter, softened
- 3 cups (360g) powdered sugar
- ¼ cup (60ml) Grape Soda (like Fanta Grape)
- 1 teaspoon vanilla extract
- Purple food coloring gel (optional, for extra vibrancy)
- Sprinkles, for garnish (optional, preferably grape-themed)
Instructions:
- Preheat oven to 350°F (175°C). Line muffin tin with cupcake liners.
- Whisk together flour, baking powder, baking soda, and salt in a medium bowl.
- In a separate bowl, cream together butter and sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the grape soda, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
- Fill each cupcake liner about ⅔ full.
- Bake for 18-22 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let cupcakes cool in the muffin tin for a few minutes, then transfer to a wire rack to cool completely.
- In a large bowl, beat butter until creamy.
- Gradually add powdered sugar, alternating with grape soda, until frosting is smooth and fluffy.
- Stir in vanilla extract and food coloring (if using).
- Once cupcakes are completely cool, frost with the grape soda frosting and garnish with sprinkles (if using).
