Ingredients:
- 1 lb (450 g) fresh asparagus, trimmed
- 2 tablespoons (30 mL) olive oil
- Salt and black pepper, to taste
- 1 large lemon, zested and juiced
- 1 tablespoon (15 mL) fresh parsley, chopped (optional)
Instructions:
- Trim the tough ends of the asparagus and rinse, patting dry.
- In a bowl, toss asparagus with olive oil, salt, and black pepper until coated.
- Heat the grill pan over medium-high heat until hot. Arrange the asparagus in a single layer and cook for 4-5 minutes, turning occasionally, until bright green and tender-crisp.
- Remove asparagus from heat. Immediately add lemon zest and juice, tossing to combine.
- Transfer to a serving platter, sprinkle with chopped parsley if using, and serve warm.
