Ingredients:

  • 1 lb (450 g) fresh asparagus, trimmed
  • 2 tablespoons (30 mL) olive oil
  • Salt and black pepper, to taste
  • 1 large lemon, zested and juiced
  • 1 tablespoon (15 mL) fresh parsley, chopped (optional)

Instructions:

  1. Trim the tough ends of the asparagus and rinse, patting dry.
  2. In a bowl, toss asparagus with olive oil, salt, and black pepper until coated.
  3. Heat the grill pan over medium-high heat until hot. Arrange the asparagus in a single layer and cook for 4-5 minutes, turning occasionally, until bright green and tender-crisp.
  4. Remove asparagus from heat. Immediately add lemon zest and juice, tossing to combine.
  5. Transfer to a serving platter, sprinkle with chopped parsley if using, and serve warm.
