Ingredients:

  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons balsamic vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 boneless, skinless chicken breasts (approximately 6 oz each)

Instructions:

  1. In a bowl, combine olive oil, lemon juice, balsamic vinegar, garlic, rosemary, thyme, oregano, salt, and black pepper.
  2. Place chicken breasts in a resealable bag or dish. Pour the marinade over the chicken and seal the bag or cover the dish. Chill in the refrigerator for 30 minutes to 2 hours.
  3. Preheat grill to medium-high heat (about 400°F/200°C).
  4. Remove chicken from marinade and discard excess marinade. Place chicken on grill. Cook for 6-7 minutes per side, or until internal temperature reaches 165°F (75°C).
  5. Remove chicken from grill and let it rest for 5 minutes before slicing. Serve with your choice of sides.
