Ingredients:
- 1 lb (450 g) boneless, skinless chicken breasts, cut into 1-inch cubes
- 3 tablespoons olive oil
- 2 tablespoons plain yogurt
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- Juice of 1 lemon
- 2 tablespoons fresh cilantro or parsley, chopped (optional)
- 8 skewers (wooden or metal)
Instructions:
- In a mixing bowl, whisk together olive oil, yogurt, spices, salt, pepper, lemon juice, and herbs until well combined.
- Add chicken cubes to the marinade and mix until evenly coated. Cover and refrigerate for at least 30 minutes.
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Preheat the grill to medium-high heat (about 400°F or 200°C).
- Thread marinated chicken onto skewers, leaving some space between each piece for even cooking.
- Place skewers on the grill and cook for 10-15 minutes, turning occasionally, until the internal temperature reaches 165°F.
- Remove skewers from the grill, let them rest for a few minutes, then serve with your choice of sides and sauces.
