Ingredients:

  • 1 lb (450 g) boneless, skinless chicken breasts, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 2 tablespoons plain yogurt
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Juice of 1 lemon
  • 2 tablespoons fresh cilantro or parsley, chopped (optional)
  • 8 skewers (wooden or metal)

Instructions:

  1. In a mixing bowl, whisk together olive oil, yogurt, spices, salt, pepper, lemon juice, and herbs until well combined.
  2. Add chicken cubes to the marinade and mix until evenly coated. Cover and refrigerate for at least 30 minutes.
  3. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  4. Preheat the grill to medium-high heat (about 400°F or 200°C).
  5. Thread marinated chicken onto skewers, leaving some space between each piece for even cooking.
  6. Place skewers on the grill and cook for 10-15 minutes, turning occasionally, until the internal temperature reaches 165°F.
  7. Remove skewers from the grill, let them rest for a few minutes, then serve with your choice of sides and sauces.
