Ingredients:

  • 3 large eggs
  • 1/4 cup roasted garlic hummus
  • 1/4 cup Persian cucumber, finely diced
  • 1 tbsp Feta cheese, finely crumbled
  • 1 tbsp Everything Bagel Seasoning
  • 1/2 tsp fresh dill, torn
  • 1/8 tsp black pepper

Instructions:

  1. Place 3 large eggs into a steamer basket over 2 cm of boiling water. Note: Steaming makes the shells much easier to remove.
  2. Cover the pot and steam for 12 minutes until the whites are set and yolks are firm.
  3. Prepare an ice bath while the eggs cook.
  4. Transfer eggs immediately to the ice bath for 5 minutes until the shells feel cold to the touch.
  5. Crack the eggshells gently and peel under cold running water.
  6. Slice each egg in half lengthwise to create 6 servings.
  7. Use a small spoon to spread 1/4 cup roasted garlic hummus across the 6 halves. Note: Aim for about 2 teaspoons per egg half.
  8. Top each half with finely diced Persian cucumber.
  9. Sprinkle 1 tbsp Feta cheese and 1 tbsp Everything Bagel Seasoning over the tops.
  10. Garnish with 1/2 tsp fresh dill and a dusting of black pepper until the colors look vibrant.
