Ingredients:
- 2 lbs boneless skinless chicken thighs
- 1/3 cup honey
- 1/4 cup low-sodium soy sauce
- 2 tbsp rice vinegar
- 1 tbsp toasted sesame oil
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1/4 tsp black pepper
- 1 tbsp cornstarch
- 1 tbsp cold water
- 1 tsp toasted sesame seeds
- 2 stalks green onions, thinly sliced
Instructions:
- Place the chicken thighs in the bottom of the slow cooker. In a small bowl, whisk together the honey, soy sauce, rice vinegar, sesame oil, garlic, ginger, and pepper. Pour the mixture evenly over the chicken, ensuring every piece is coated.
- Cover and cook on Low for 7-8 hours or High for 4 hours until the chicken is tender.
- Whisk the cornstarch and cold water together to create a slurry, then stir it into the slow cooker. Turn the heat to High and cook for another 15-30 minutes until the sauce transforms into a glossy glaze. Garnish with sesame seeds and green onions.
