Ingredients:

  • 2 lbs boneless skinless chicken thighs
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/4 tsp black pepper
  • 1 tbsp cornstarch
  • 1 tbsp cold water
  • 1 tsp toasted sesame seeds
  • 2 stalks green onions, thinly sliced

Instructions:

  1. Place the chicken thighs in the bottom of the slow cooker. In a small bowl, whisk together the honey, soy sauce, rice vinegar, sesame oil, garlic, ginger, and pepper. Pour the mixture evenly over the chicken, ensuring every piece is coated.
  2. Cover and cook on Low for 7-8 hours or High for 4 hours until the chicken is tender.
  3. Whisk the cornstarch and cold water together to create a slurry, then stir it into the slow cooker. Turn the heat to High and cook for another 15-30 minutes until the sauce transforms into a glossy glaze. Garnish with sesame seeds and green onions.
