Ingredients:
- 3 slices high-quality wholemeal or sourdough bread (approx. 40-50g per slice)
- 1 tbsp Extra Virgin Olive Oil (or a light slather of unsalted butter)
- Pinch fine sea salt
- Pinch freshly cracked black pepper
- 2 tbsp Full-fat Ricotta Cheese (or thick Greek yogurt)
- 1 tsp Lemon Zest (finely grated)
- 1/2 cup Mixed Berries (fresh or defrosted frozen)
- 1 tsp Good quality honey or maple syrup
- Optional: Chopped pistachios or chia seeds
- 1/3 cup Frozen Peas (thawed)
- 1 tsp Fresh Lemon Juice
- 1 tbsp Crumbled Feta Cheese (or goat cheese)
- 1 tsp Fresh Mint, finely chopped
- Optional: Smoked paprika or chilli flakes
- 1 oz Smoked Salmon, thinly sliced (or 2 tbsp canned tuna mixed with 1 tsp Greek yogurt)
- 2 thin slices English Cucumber
- 1 tsp Fresh Dill, chopped
- 1 tsp Cream Cheese or Labneh
- Optional: Capers or black sesame seeds
Instructions:
- Toast the three slices of bread until deeply golden brown and crisp. A dark toast provides better structural integrity for the toppings.
- Immediately rub the toasted slices lightly with olive oil or spread with butter, then season very lightly with salt and pepper. Set aside.
- Prepare Component 1 (Ricotta): In a small bowl, gently stir together the ricotta, lemon zest, and a tiny pinch of salt (the salt enhances the sweetness).
- Prepare Component 2 (Pea Mash): Place the thawed peas, mint, and lemon juice into a second bowl. Use a fork or masher to crush the mixture until chunky—do not aim for a smooth purée. Season aggressively with salt and pepper.
- Prepare Component 3 (Protein Spread): If using tuna, mix it with a small amount of Greek yogurt or mayonnaise, and season well. If using smoked salmon, no prep is needed other than slicing the cucumber.
- Assemble Toast 1 (Sweet): Spread the lemon ricotta mixture evenly over the first slice of toast. Top generously with the mixed berries. Drizzle with honey/maple syrup and optional pistachios/chia seeds just before serving.
- Assemble Toast 2 (Green): Spread the chunky pea and mint mash over the second slice, ensuring it covers the edges. Gently crumble the feta cheese on top. Garnish with chili flakes or paprika if desired.
- Assemble Toast 3 (Scandi): Spread the cream cheese (or labneh/tuna mixture) thinly over the third slice. Layer the cucumber slices neatly, and top with the smoked salmon slices (or the seasoned tuna mix). Sprinkle with fresh dill and capers/sesame seeds.
- Serve immediately while the toast is still warm and crunchy.
