Ingredients:

  • 1 pound ground beef (or substitute with turkey or a plant-based alternative)
  • 1 medium onion, diced
  • 1 bell pepper, diced (any color)
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes (no salt added)
  • 2 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Sliced jalapeños (optional)
  • Sour cream or Greek yogurt (optional)
  • Chopped fresh cilantro (optional)
  • Shredded cheese (optional)

Instructions:

  1. In a large skillet, heat a bit of oil over medium heat. Brown the ground beef until fully cooked. Drain excess fat.
  2. In the crockpot, add browned meat along with onion, bell pepper, garlic, kidney beans, black beans, diced tomatoes, tomato paste, chili powder, cumin, and paprika. Season with salt and pepper.
  3. Mix all ingredients until well combined.
  4. Cover the crockpot and set to low for 6 to 8 hours or high for 3 to 4 hours. Stir occasionally if possible.
  5. Adjust seasoning if needed. Serve hot with your choice of toppings.
