Ingredients:
- 1 pound ground beef (or substitute with turkey or a plant-based alternative)
- 1 medium onion, diced
- 1 bell pepper, diced (any color)
- 2 cloves garlic, minced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes (no salt added)
- 2 tablespoons tomato paste
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Sliced jalapeños (optional)
- Sour cream or Greek yogurt (optional)
- Chopped fresh cilantro (optional)
- Shredded cheese (optional)
Instructions:
- In a large skillet, heat a bit of oil over medium heat. Brown the ground beef until fully cooked. Drain excess fat.
- In the crockpot, add browned meat along with onion, bell pepper, garlic, kidney beans, black beans, diced tomatoes, tomato paste, chili powder, cumin, and paprika. Season with salt and pepper.
- Mix all ingredients until well combined.
- Cover the crockpot and set to low for 6 to 8 hours or high for 3 to 4 hours. Stir occasionally if possible.
- Adjust seasoning if needed. Serve hot with your choice of toppings.
