Ingredients:

  • 1 ½ cups (190g) all-purpose flour
  • 1 cup (200g) granulated sugar

  • 1 cup (120g) powdered sugar
  • 2 tablespoons (30ml) milk
  • ½ teaspoon vanilla extract
  • Optional: a pinch of salt for flavor adjustment

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease the cake pan.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, followed by vanilla extract and lemon zest; mix well.
  4. In a separate bowl, sift together flour, baking powder, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with milk; mix until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake in the preheated oven for 30 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before transferring to a cooling rack.
  9. While cooling, prepare the icing by whisking together powdered sugar, milk, and vanilla until smooth.
  10. Once the cake is fully cooled, drizzle the icing over the top and let it set before slicing.
