Ingredients:

  • 2 medium zucchinis, sliced (approx. 300g)
  • 1 red bell pepper, diced (approx. 150g)
  • 1 yellow bell pepper, diced (approx. 150g)
  • 1 medium red onion, cut into wedges (approx. 200g)
  • 2 cups broccoli florets (approx. 150g)
  • 3 tablespoons olive oil (45 ml)
  • 1 teaspoon garlic powder (5g)
  • 1 teaspoon dried thyme (5g)
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Wash and chop the vegetables into even sizes for uniform cooking.
  3. In a large mixing bowl, combine the chopped veggies with olive oil, garlic powder, thyme, salt, and pepper.
  4. Spread the seasoned vegetables in a single layer on the baking sheet.
  5. Place the baking sheet in the oven and roast for 30-40 minutes, stirring halfway through. Cook until veggies are tender and browned, with a few crispy edges.
  6. Serve warm either on their own or as a side dish.
