Ingredients:
- 2 medium zucchinis, sliced (approx. 300g)
- 1 red bell pepper, diced (approx. 150g)
- 1 yellow bell pepper, diced (approx. 150g)
- 1 medium red onion, cut into wedges (approx. 200g)
- 2 cups broccoli florets (approx. 150g)
- 3 tablespoons olive oil (45 ml)
- 1 teaspoon garlic powder (5g)
- 1 teaspoon dried thyme (5g)
- Salt and pepper to taste
Instructions:
- Preheat your oven to 425°F (220°C).
- Wash and chop the vegetables into even sizes for uniform cooking.
- In a large mixing bowl, combine the chopped veggies with olive oil, garlic powder, thyme, salt, and pepper.
- Spread the seasoned vegetables in a single layer on the baking sheet.
- Place the baking sheet in the oven and roast for 30-40 minutes, stirring halfway through. Cook until veggies are tender and browned, with a few crispy edges.
- Serve warm either on their own or as a side dish.
