Ingredients:
- 1/4 cup olive oil
- 4 large cloves garlic, minced
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh thyme, finely chopped
- 1 tablespoon fresh parsley, finely chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 bone-in, skin-on chicken thighs (about 1.5 lbs)
- 1 lemon, zested and juiced
- Fresh herbs for garnish (optional)
Instructions:
- Combine olive oil, minced garlic, rosemary, thyme, parsley, salt, and pepper in a mixing bowl. Whisk until well blended.
- Add chicken thighs to a baking dish. Pour the marinade over the chicken
- Preheat your oven to 400°F (200°C).
- Remove chicken from the refrigerator and let it sit at room temperature for 10 minutes. Place the chicken in the oven and bake for 35-45 minutes, or until the skin is golden brown.
- Remove the chicken from the oven and squeeze fresh lemon juice on top. Garnish with additional fresh herbs, if desired. Serve hot.
