Ingredients:

  • 2 cups long-grain white rice
  • 4 cups water or chicken broth
  • 1 tablespoon olive oil
  • Juice of 1 lime
  • 1 teaspoon salt
  • 1/2 teaspoon cumin
  • 1 lb chicken breast, ground beef, or black beans
  • 2 tablespoons chipotle seasoning blend
  • 1 cup corn
  • 1 cup black beans
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1 cup shredded cheese
  • 1/2 cup fresh cilantro, chopped
  • Sour cream or yogurt for serving

Instructions:

  1. In a medium saucepan, combine rice, water or broth, olive oil, salt, and cumin. Bring to a boil, then reduce heat, cover, and simmer for 18-20 minutes until water is absorbed. Remove from heat and fluff with a fork. Stir in lime juice.
  2. If using chicken, season with chipotle seasoning and grill or sauté until cooked through. If using ground beef, cook in a skillet until browned and drain excess fat. Stir in seasoning and cook for an additional 2-3 minutes. For black beans, heat them in a small pot until warmed.
  3. Start with a hefty scoop of chipotle rice as the base. Layer your protein of choice on top. Add corn, black beans, diced tomatoes, diced avocado, and shredded cheese.
  4. Top with fresh cilantro and a dollop of sour cream. Enjoy immediately or meal prep and store in the fridge for later!
