Ingredients:
- 2 cups long-grain white rice
- 4 cups water or chicken broth
- 1 tablespoon olive oil
- Juice of 1 lime
- 1 teaspoon salt
- 1/2 teaspoon cumin
- 1 lb chicken breast, ground beef, or black beans
- 2 tablespoons chipotle seasoning blend
- 1 cup corn
- 1 cup black beans
- 1 cup diced tomatoes
- 1 avocado, diced
- 1 cup shredded cheese
- 1/2 cup fresh cilantro, chopped
- Sour cream or yogurt for serving
Instructions:
- In a medium saucepan, combine rice, water or broth, olive oil, salt, and cumin. Bring to a boil, then reduce heat, cover, and simmer for 18-20 minutes until water is absorbed. Remove from heat and fluff with a fork. Stir in lime juice.
- If using chicken, season with chipotle seasoning and grill or sauté until cooked through. If using ground beef, cook in a skillet until browned and drain excess fat. Stir in seasoning and cook for an additional 2-3 minutes. For black beans, heat them in a small pot until warmed.
- Start with a hefty scoop of chipotle rice as the base. Layer your protein of choice on top. Add corn, black beans, diced tomatoes, diced avocado, and shredded cheese.
- Top with fresh cilantro and a dollop of sour cream. Enjoy immediately or meal prep and store in the fridge for later!
