Ingredients:

  • 2.5-3 lbs bone-in, skin-on chicken thighs
  • 1/4 cup soy sauce (low sodium recommended)
  • 1/4 cup honey
  • 2 tablespoons minced garlic
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • Optional garnish: chopped green onions, sesame seeds

Instructions:

  1. Pat chicken thighs dry with paper towels. Season generously with salt and pepper.
  2. In a small bowl, whisk together soy sauce, honey, garlic, apple cider vinegar, olive oil, thyme, smoked paprika, and red pepper flakes (if using).
  3. Place chicken thighs in the slow cooker in a single layer (or overlapping slightly if necessary).
  4. Pour the honey garlic sauce evenly over the chicken thighs, ensuring they are well coated.
  5. Cover the slow cooker and cook on low for 6-8 hours, or on high for 3-4 hours. Chicken is done when it reaches an internal temperature of 165°F (74°C) and easily pulls away from the bone. Enjoy these easy chicken thighs in crock pot.
