Ingredients:
- 2.5-3 lbs bone-in, skin-on chicken thighs
- 1/4 cup soy sauce (low sodium recommended)
- 1/4 cup honey
- 2 tablespoons minced garlic
- 1 tablespoon apple cider vinegar
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper, to taste
- Optional garnish: chopped green onions, sesame seeds
Instructions:
- Pat chicken thighs dry with paper towels. Season generously with salt and pepper.
- In a small bowl, whisk together soy sauce, honey, garlic, apple cider vinegar, olive oil, thyme, smoked paprika, and red pepper flakes (if using).
- Place chicken thighs in the slow cooker in a single layer (or overlapping slightly if necessary).
- Pour the honey garlic sauce evenly over the chicken thighs, ensuring they are well coated.
- Cover the slow cooker and cook on low for 6-8 hours, or on high for 3-4 hours. Chicken is done when it reaches an internal temperature of 165°F (74°C) and easily pulls away from the bone. Enjoy these easy chicken thighs in crock pot.
