Ingredients:
- 1 lb (450g) fresh salmon fillet, skin removed and cut into 1-inch cubes
- 1 tablespoon (15ml) olive oil
- Salt and freshly ground black pepper, to taste
- 1/4 teaspoon red pepper flakes (optional)
- 3 tablespoons (45g) unsalted butter
- 3 cloves garlic, minced
- 3 tablespoons (45ml) honey
- 1 tablespoon (15ml) soy sauce (low sodium preferred)
- 1 tablespoon (15ml) lemon juice, fresh
- Chopped fresh parsley or chives (optional)
- Sesame seeds (optional)
Instructions:
- Pat salmon bites dry with paper towels. Season with salt, pepper, and red pepper flakes (if using).
- In a small bowl, whisk together the honey, soy sauce, and lemon juice. Set aside.
- Melt butter in the skillet over medium heat. Add minced garlic and cook until fragrant, about 30 seconds to 1 minute.
- Pour the glaze mixture into the skillet with the garlic butter. Bring to a simmer, stirring constantly, until slightly thickened, about 1-2 minutes.
- Add the salmon bites to the skillet. Cook, turning occasionally, until the salmon is cooked through and opaque, about 5-7 minutes total.
- Continue to cook, spooning the glaze over the salmon bites, until the glaze is thick and sticky, about 2-3 minutes more. Be careful not to overcook the salmon!
- Sprinkle with chopped parsley or chives and sesame seeds (if using). Serve immediately.
