Ingredients:

  • 1 lb (450g) fresh salmon fillet, skin removed and cut into 1-inch cubes
  • 1 tablespoon (15ml) olive oil
  • Salt and freshly ground black pepper, to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • 3 tablespoons (45g) unsalted butter
  • 3 cloves garlic, minced
  • 3 tablespoons (45ml) honey
  • 1 tablespoon (15ml) soy sauce (low sodium preferred)
  • 1 tablespoon (15ml) lemon juice, fresh
  • Chopped fresh parsley or chives (optional)
  • Sesame seeds (optional)

Instructions:

  1. Pat salmon bites dry with paper towels. Season with salt, pepper, and red pepper flakes (if using).
  2. In a small bowl, whisk together the honey, soy sauce, and lemon juice. Set aside.
  3. Melt butter in the skillet over medium heat. Add minced garlic and cook until fragrant, about 30 seconds to 1 minute.
  4. Pour the glaze mixture into the skillet with the garlic butter. Bring to a simmer, stirring constantly, until slightly thickened, about 1-2 minutes.
  5. Add the salmon bites to the skillet. Cook, turning occasionally, until the salmon is cooked through and opaque, about 5-7 minutes total.
  6. Continue to cook, spooning the glaze over the salmon bites, until the glaze is thick and sticky, about 2-3 minutes more. Be careful not to overcook the salmon!
  7. Sprinkle with chopped parsley or chives and sesame seeds (if using). Serve immediately.
