Ingredients:
- 3 lbs chicken wings, party style (flats and drums separated)
- 1 tbsp neutral oil
- 1 tsp kosher salt
- ½ cup soy sauce
- ¼ cup mirin
- ¼ cup brown sugar, packed
- 2 tbsp rice vinegar
- 1 tbsp fresh ginger, grated
- 3 cloves garlic, minced
- 1 tsp toasted sesame oil
- 1 tbsp cornstarch mixed with 1 tbsp cold water
Instructions:
- Place the chicken wings in the slow cooker in a single layer as much as possible. Drizzle with neutral oil and sprinkle with salt.
- Pour over the soy sauce, mirin, brown sugar, rice vinegar, ginger, garlic, and sesame oil. Stir gently to ensure every wing is coated.
- Cover and cook on High for 3-4 hours or Low for 6-8 hours until the meat is tender but not falling off the bone.
- Carefully pour the accumulated liquid from the slow cooker into a small saucepan. Bring to a simmer over medium heat.
- Whisk in the cornstarch slurry and continue to simmer for 3-5 minutes, stirring constantly, until the sauce transforms into a thick, velvety glaze.
- Preheat oven broiler to high. Arrange wings on a foil lined baking sheet.
- Brush generously with the reduced glaze.
- Broil for 2-4 minutes until bubbling and deep mahogany brown.
