Ingredients:
- 1 cup (226g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- ¼ cup (50g) packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract (5ml)
- 2 ¼ cups (281g) all-purpose flour
- 1 teaspoon (5g) baking soda
- ½ teaspoon (2.5g) salt
- 1 (3 ounce) package Jell-O, any flavour (85g)
- Granulated sugar for coating (optional)
Instructions:
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Stir in the Jell-O powder until evenly distributed throughout the dough.
- Cover the dough and chill in the refrigerator for at least 30 minutes.
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper or silicone baking mats.
- Drop by rounded tablespoons (or use a cookie scoop) onto the prepared baking sheets, leaving some space between cookies. Optionally roll cookies in granulated sugar before baking.
- Bake for 8-10 minutes, or until the edges are lightly golden brown.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
