Ingredients:

  • 2 lbs boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1/2 tsp dried oregano

Instructions:

  1. Pat the chicken breasts completely dry with paper towels to ensure the oil adheres.
  2. In a small bowl, whisk together the smoked paprika, garlic powder, onion powder, salt, pepper, and oregano.
  3. Rub the olive oil evenly over all sides of the chicken.
  4. Coat the chicken generously with the spice blend, pressing the seasoning into the meat with your palms.
  5. Place the seasoned breasts in the bottom of the slow cooker, overlapping them slightly if necessary.
  6. Set the slow cooker to High for 3 hours or Low for 5 to 6 hours. Cover with the lid.
  7. Insert a meat thermometer into the thickest part of the largest breast and remove the chicken immediately when it hits 165°F (74°C).
  8. Transfer the chicken to a plate and let it rest for 10 minutes before serving.
