Ingredients:
- 2 lbs boneless skinless chicken breasts
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1/2 tsp dried oregano
Instructions:
- Pat the chicken breasts completely dry with paper towels to ensure the oil adheres.
- In a small bowl, whisk together the smoked paprika, garlic powder, onion powder, salt, pepper, and oregano.
- Rub the olive oil evenly over all sides of the chicken.
- Coat the chicken generously with the spice blend, pressing the seasoning into the meat with your palms.
- Place the seasoned breasts in the bottom of the slow cooker, overlapping them slightly if necessary.
- Set the slow cooker to High for 3 hours or Low for 5 to 6 hours. Cover with the lid.
- Insert a meat thermometer into the thickest part of the largest breast and remove the chicken immediately when it hits 165°F (74°C).
- Transfer the chicken to a plate and let it rest for 10 minutes before serving.
