Ingredients:

  • 1 ½ cups Superfine Almond Flour (180 g)
  • 2 Tbsp Coconut Flour (15 g)
  • ½ cup Erythritol/Monk Fruit Sweetener Blend (Granulated, 100 g)
  • 1 tsp Baking Powder (5 g)
  • 1 tsp Ground Cinnamon (5 g)
  • ½ tsp Ground Nutmeg (2.5 g)
  • ¼ tsp Allspice or Cloves (optional, 1 g)
  • 4 Tbsp Unsalted Butter, Melted (56 g), cooled slightly
  • 2 Large Eggs, room temperature (100 g)
  • ¼ cup Unsweetened Almond Milk (60 ml)
  • 1 tsp Apple Cider Vinegar (ACV) (5 ml)
  • 1 tsp Vanilla Extract (5 ml)
  • ½ tsp Apple Extract (Natural Flavouring, 2.5 ml, optional)
  • 2 Tbsp Unsalted Butter, Softened (28 g, for coating)
  • 4 Tbsp Erythritol/Monk Fruit Sweetener Blend (Powdered, 50 g, for coating)
  • 1 Tbsp Ground Cinnamon (15 g, for coating)

Instructions:

  1. Preheat oven to 175°C (350°F). Lightly grease a 12-well mini-muffin or donut hole pan.
  2. In a large bowl, whisk together the almond flour, coconut flour, sweetener, baking powder, cinnamon, nutmeg, and allspice until thoroughly combined and lump-free. Set aside.
  3. In a separate medium bowl, whisk the eggs until foamy. Whisk in the melted butter, almond milk, ACV, vanilla extract, and apple extract (if using).
  4. Pour the wet mixture into the dry ingredients. Use a rubber spatula to gently fold and combine until just mixed. Do not overmix. The batter will be thick.
  5. Using a small scoop, fill each well of the prepared pan about three-quarters full. Bake for 12 to 14 minutes, or until the bites are golden brown, spring back lightly when touched, and a toothpick inserted into the centre comes out clean.
  6. Remove the pan from the oven. Let the donut bites cool in the pan for 2 minutes before carefully transferring them to a wire rack.
  7. Prepare the coating: While the bites are cooling, combine the powdered sweetener and cinnamon for the coating in a shallow dish. Melt the softened butter in a separate small bowl.
  8. Working quickly while the bites are still warm, brush each bite generously with the melted butter. Immediately transfer the buttered bite to the cinnamon-sugar mix and roll thoroughly to coat all surfaces.
  9. Place the coated donut bites back on the wire rack to set briefly before serving.
