  • ½ cup Granulated Keto Sweetener (Monk fruit/Erythritol blend recommended)
  • 1 teaspoon Vanilla Extract
  • ½ teaspoon Fine Sea Salt
  • 2 cups Super-Fine Almond Flour
  • 1 cup Ground Pecans (or Walnuts), finely ground
  • 1 cup Powdered Keto Sweetener (for coating, must be powdered erythritol or blend)

Instructions:

  1. Cream the Butter and Sweetener: In the bowl of a stand mixer, cream the softened butter and granulated keto sweetener on medium speed until light and fluffy (approx. 2–3 minutes). Scrape down the sides frequently.
  2. Add Wet Ingredients: Beat in the vanilla extract and salt until just combined.
  3. Incorporate Dry Ingredients: Reduce the mixer speed to low. Gradually add the almond flour and ground pecans. Mix only until the dough just comes together and no streaks of dry flour remain. Do not overmix.
  4. Chill the Dough: Wrap the dough tightly in cling film or place it in an airtight container. Refrigerate for at least 30 minutes to prevent spreading.
  5. Preheat and Prep: Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  6. Scoop and Shape: Using a tablespoon-sized scoop, portion the dough. Roll each portion firmly between your palms into a compact, smooth ball (approx. 1 inch / 2.5 cm diameter).
  7. Bake: Place the balls about 1 inch apart on the prepared baking sheets. Bake for 12–15 minutes, or until the edges are lightly golden brown and the centers are set.
  8. First Coat (Crucial): Remove the cookies from the oven. Allow them to cool on the tray for 2–3 minutes only. While still warm, gently roll each cookie in the bowl of powdered keto sweetener until completely coated. Set them back on the cooling rack.
  9. Cool Completely: Allow the cookies to cool completely (about 20–30 minutes) to room temperature. This sets the first, thin layer of powdered sweetener.
  10. Second Coat: Once fully cool, roll the cookies in the powdered sweetener a second time. Press the powder gently to ensure a thick, snowy coating. This double-dip ensures that iconic, truly white ‘snowball’ look.
