Ingredients:
- 1 ½ cups (150g) graham cracker crumbs, finely crushed
- ¼ cup (50g) granulated sugar
- 6 tablespoons (85g) unsalted butter, melted
- Pinch of salt
- 8 ounces (225g) cream cheese, softened
- ½ cup (100g) granulated sugar
- ½ cup (120ml) heavy cream
- ⅓ cup (80ml) Key lime juice
- 1 teaspoon (5ml) Key lime zest
- ½ teaspoon (2.5ml) vanilla extract
- 1 cup (240ml) heavy cream
- 2 tablespoons (25g) powdered sugar
- ½ teaspoon (2.5ml) vanilla extract
- Key lime slices, graham cracker crumbs (optional)
Instructions:
- Prepare the Graham Cracker Crumble: Combine graham cracker crumbs, sugar, melted butter, and salt in a bowl. Mix well. (Optional: Toast in a preheated oven at 350°F/175°C for 5 minutes, or until lightly golden brown. Let cool completely).
- Make the Key Lime Cheesecake Filling: Beat softened cream cheese and sugar together until smooth and creamy. Gradually beat in the heavy cream until combined. Stir in Key lime juice, zest, and vanilla extract.
- Prepare the Whipped Cream: In a chilled bowl, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Assemble the Parfaits: Layer graham cracker crumble, Key lime cheesecake filling, and whipped cream in each serving glass. Repeat layers as desired.
- Chill: Cover and refrigerate parfaits for at least 30 minutes to allow the flavors to meld.
- Garnish & Serve: Before serving, garnish with Key lime slices and extra graham cracker crumbs (optional).
