Ingredients:

  • 1 ½ cups (150g) graham cracker crumbs, finely crushed
  • ¼ cup (50g) granulated sugar
  • 6 tablespoons (85g) unsalted butter, melted
  • Pinch of salt
  • 8 ounces (225g) cream cheese, softened
  • ½ cup (100g) granulated sugar
  • ½ cup (120ml) heavy cream
  • ⅓ cup (80ml) Key lime juice
  • 1 teaspoon (5ml) Key lime zest
  • ½ teaspoon (2.5ml) vanilla extract
  • 1 cup (240ml) heavy cream
  • 2 tablespoons (25g) powdered sugar
  • ½ teaspoon (2.5ml) vanilla extract
  • Key lime slices, graham cracker crumbs (optional)

Instructions:

  1. Prepare the Graham Cracker Crumble: Combine graham cracker crumbs, sugar, melted butter, and salt in a bowl. Mix well. (Optional: Toast in a preheated oven at 350°F/175°C for 5 minutes, or until lightly golden brown. Let cool completely).
  2. Make the Key Lime Cheesecake Filling: Beat softened cream cheese and sugar together until smooth and creamy. Gradually beat in the heavy cream until combined. Stir in Key lime juice, zest, and vanilla extract.
  3. Prepare the Whipped Cream: In a chilled bowl, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  4. Assemble the Parfaits: Layer graham cracker crumble, Key lime cheesecake filling, and whipped cream in each serving glass. Repeat layers as desired.
  5. Chill: Cover and refrigerate parfaits for at least 30 minutes to allow the flavors to meld.
  6. Garnish & Serve: Before serving, garnish with Key lime slices and extra graham cracker crumbs (optional).
