Ingredients:

  • 2 (15 ounce) cans whole kernel corn, drained (850g total)
  • 1 (8 ounce) package cream cheese, softened (225g)
  • 1 cup mayonnaise (240ml)
  • 1 cup shredded cheddar cheese (100g)
  • ½ cup shredded Monterey Jack cheese (50g)
  • ½ cup chopped green onions (50g)
  • 1 (4 ounce) can diced green chilies, undrained (115g)
  • 1 jalapeño, seeded and minced (optional)
  • ½ teaspoon garlic powder (2.5ml)
  • ¼ teaspoon black pepper (1.25ml)
  • Pinch of cayenne pepper (optional)
  • Tortilla chips, crackers, or fresh vegetables

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine the drained corn, softened cream cheese, mayonnaise, cheddar cheese, Monterey Jack cheese, green onions, green chilies, jalapeño (if using), garlic powder, black pepper, and cayenne pepper (if using). Mix until well combined.
  3. Pour the mixture into the prepared baking dish and spread evenly.
  4. Bake for 20-25 minutes, or until golden brown and bubbly.
  5. Let cool for a few minutes before serving.
  6. Serve warm with tortilla chips, crackers, or vegetables.
