Ingredients:
- 1 ½ cups heavy cream
- ½ cup whole milk
- ⅓ cup honey
- 2 tsp dried culinary lavender
- 1 packet unflavored gelatin
- 3 tbsp cold water
- 1 tsp vanilla extract
- Pinch of salt
- Edible flowers for garnish
- Honey drizzle for garnish
- Fresh mint leaves for garnish
Instructions:
- In a saucepan, combine heavy cream, milk, honey, and dried lavender. Heat over medium-low, stirring, until steaming. Remove from heat and steep for 15 minutes.
- In a small bowl, sprinkle gelatin over cold water and let it bloom for 5 minutes.
- Strain the infused cream mixture through a fine mesh strainer into a mixing bowl. Discard lavender flowers. Stir in bloomed gelatin until fully dissolved.
- Mix in vanilla extract and a pinch of salt.
- Divide the mixture evenly among serving cups. Cover with plastic wrap and chill in the refrigerator for at least 4 hours or until set.
- Once set, garnish with edible flowers, a drizzle of honey, and fresh mint leaves before serving.
