Ingredients:

  • 1 ½ cups heavy cream
  • ½ cup whole milk
  • ⅓ cup honey
  • 2 tsp dried culinary lavender
  • 1 packet unflavored gelatin
  • 3 tbsp cold water
  • 1 tsp vanilla extract
  • Pinch of salt
  • Edible flowers for garnish
  • Honey drizzle for garnish
  • Fresh mint leaves for garnish

Instructions:

  1. In a saucepan, combine heavy cream, milk, honey, and dried lavender. Heat over medium-low, stirring, until steaming. Remove from heat and steep for 15 minutes.
  2. In a small bowl, sprinkle gelatin over cold water and let it bloom for 5 minutes.
  3. Strain the infused cream mixture through a fine mesh strainer into a mixing bowl. Discard lavender flowers. Stir in bloomed gelatin until fully dissolved.
  4. Mix in vanilla extract and a pinch of salt.
  5. Divide the mixture evenly among serving cups. Cover with plastic wrap and chill in the refrigerator for at least 4 hours or until set.
  6. Once set, garnish with edible flowers, a drizzle of honey, and fresh mint leaves before serving.
