Ingredients:

  • 2 cups cooked turkey, shredded
  • 1 cup frozen mixed vegetables (carrots, peas, corn)
  • 1 cup turkey or chicken broth
  • 1 cup cream of mushroom soup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • ½ cup breadcrumbs
  • 2 tablespoons olive oil or melted butter

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a frying pan, add a drizzle of olive oil and sauté frozen mixed vegetables until heated through (about 5-7 minutes).
  3. In a large mixing bowl, combine shredded turkey, sautéed vegetables, turkey broth, cream of mushroom soup, garlic powder, onion powder, dried thyme, salt, and pepper. Mix until well combined.
  4. Pour the turkey mixture into a greased 9x13-inch baking dish, spreading it evenly.
  5. In a small bowl, mix breadcrumbs, shredded cheddar cheese, and olive oil or melted butter until the breadcrumbs are coated.
  6. Sprinkle the breadcrumb mixture evenly over the turkey filling.
  7. Place the dish in the preheated oven and bake for 35-40 minutes until the casserole is bubbling and the topping is golden brown.
  8. Allow the casserole to cool for a few minutes before serving.
