Ingredients:
- 2 cups cooked turkey, shredded
- 1 cup frozen mixed vegetables (carrots, peas, corn)
- 1 cup turkey or chicken broth
- 1 cup cream of mushroom soup
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- ½ cup breadcrumbs
- 2 tablespoons olive oil or melted butter
Instructions:
- Preheat the oven to 350°F (175°C).
- In a frying pan, add a drizzle of olive oil and sauté frozen mixed vegetables until heated through (about 5-7 minutes).
- In a large mixing bowl, combine shredded turkey, sautéed vegetables, turkey broth, cream of mushroom soup, garlic powder, onion powder, dried thyme, salt, and pepper. Mix until well combined.
- Pour the turkey mixture into a greased 9x13-inch baking dish, spreading it evenly.
- In a small bowl, mix breadcrumbs, shredded cheddar cheese, and olive oil or melted butter until the breadcrumbs are coated.
- Sprinkle the breadcrumb mixture evenly over the turkey filling.
- Place the dish in the preheated oven and bake for 35-40 minutes until the casserole is bubbling and the topping is golden brown.
- Allow the casserole to cool for a few minutes before serving.
