Ingredients:

  • 1 ½ cups (150g) graham cracker crumbs
  • 6 tablespoons (85g) unsalted butter, melted
  • 2 tablespoons (25g) granulated sugar
  • 16 oz (450g) cream cheese, softened
  • ½ cup (100g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup (approx. 225g) store-bought lemon curd
  • 1 box (15.25 oz / 432g) lemon cake mix
  • ¾ cup (1 ½ sticks or 170g) unsalted butter, melted

Instructions:

  1. Combine graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of the baking dish.
  2. Beat softened cream cheese and sugar until smooth. Beat in egg and vanilla extract until combined.
  3. Spread the cream cheese mixture evenly over the graham cracker crust.
  4. Gently spoon the lemon curd over the cream cheese layer, spacing evenly.
  5. Evenly distribute the dry lemon cake mix over the lemon curd layer.
  6. Pour the melted butter evenly over the dry cake mix.
  7. Bake in a preheated oven at 350°F (175°C) for 45-50 minutes, or until the top is golden brown and the filling is set.
  8. Let cool completely before cutting and serving.
