Ingredients:
- 1 ½ cups (150g) graham cracker crumbs
- 6 tablespoons (85g) unsalted butter, melted
- 2 tablespoons (25g) granulated sugar
- 16 oz (450g) cream cheese, softened
- ½ cup (100g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup (approx. 225g) store-bought lemon curd
- 1 box (15.25 oz / 432g) lemon cake mix
- ¾ cup (1 ½ sticks or 170g) unsalted butter, melted
Instructions:
- Combine graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of the baking dish.
- Beat softened cream cheese and sugar until smooth. Beat in egg and vanilla extract until combined.
- Spread the cream cheese mixture evenly over the graham cracker crust.
- Gently spoon the lemon curd over the cream cheese layer, spacing evenly.
- Evenly distribute the dry lemon cake mix over the lemon curd layer.
- Pour the melted butter evenly over the dry cake mix.
- Bake in a preheated oven at 350°F (175°C) for 45-50 minutes, or until the top is golden brown and the filling is set.
- Let cool completely before cutting and serving.
