Ingredients:

  • 4 salmon fillets (about 6 ounces each / 170 grams)
  • 2 tablespoons olive oil (30 ml)
  • 2 cloves garlic, minced
  • 1 lemon, sliced
  • 1 teaspoon fresh dill, chopped (5 g) or ½ teaspoon dried dill
  • 1 teaspoon fresh parsley, chopped (5 g) or ½ teaspoon dried parsley
  • Salt and black pepper to taste
  • Fresh asparagus or sliced bell peppers for roasting (optional)
  • Additional lemon wedges for serving (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Prepare a sheet of aluminum foil large enough to wrap the salmon fillets.
  3. In a bowl, combine olive oil, minced garlic, dill, parsley, salt, and pepper.
  4. Place the salmon fillets in the center of the foil.
  5. Drizzle the olive oil mixture over the salmon, ensuring even coverage.
  6. Layer lemon slices on top of the salmon.
  7. Fold the sides of the foil over the salmon, sealing tightly to retain steam.
  8. Bake in the preheated oven for 20 minutes, or until the salmon flakes easily with a fork (internal temperature of 145°F (63°C)).
  9. Serve directly in the foil or transfer to plates, along with roasted vegetables if desired.
