Ingredients:
- 4 salmon fillets (about 6 ounces each / 170 grams)
- 2 tablespoons olive oil (30 ml)
- 2 cloves garlic, minced
- 1 lemon, sliced
- 1 teaspoon fresh dill, chopped (5 g) or ½ teaspoon dried dill
- 1 teaspoon fresh parsley, chopped (5 g) or ½ teaspoon dried parsley
- Salt and black pepper to taste
- Fresh asparagus or sliced bell peppers for roasting (optional)
- Additional lemon wedges for serving (optional)
Instructions:
- Preheat the oven to 375°F (190°C).
- Prepare a sheet of aluminum foil large enough to wrap the salmon fillets.
- In a bowl, combine olive oil, minced garlic, dill, parsley, salt, and pepper.
- Place the salmon fillets in the center of the foil.
- Drizzle the olive oil mixture over the salmon, ensuring even coverage.
- Layer lemon slices on top of the salmon.
- Fold the sides of the foil over the salmon, sealing tightly to retain steam.
- Bake in the preheated oven for 20 minutes, or until the salmon flakes easily with a fork (internal temperature of 145°F (63°C)).
- Serve directly in the foil or transfer to plates, along with roasted vegetables if desired.
