Ingredients:

  • 4 (6-ounce/170g) salmon fillets, skin on or off
  • 1 tablespoon/15ml olive oil
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons/30g unsalted butter, softened
  • 1 tablespoon/15ml lemon juice, freshly squeezed
  • 1 tablespoon/15ml chopped fresh parsley
  • 1 tablespoon/15ml chopped fresh dill
  • 1 clove garlic, minced (about 1 teaspoon)
  • 1/4 teaspoon/1g lemon zest
  • 1/4 teaspoon/1g red pepper flakes (optional)
  • 1/4 teaspoon/1g salt
  • 1/8 teaspoon/0.5g black pepper

Instructions:

  1. Preheat oven to 400°F/200°C. Line a baking sheet with parchment paper or foil.
  2. Pat the salmon fillets dry. Place them on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper.
  3. In a small bowl, combine the softened butter, lemon juice, parsley, dill, minced garlic, lemon zest, red pepper flakes (if using), salt, and pepper. Mix well.
  4. Evenly spread the lemon-herb mixture over the top of each salmon fillet.
  5. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork. Check for doneness – the internal temperature should reach 145°F (63°C).
  6. Let the salmon rest for a few minutes before serving.
