Ingredients:
- 4 boneless, skinless chicken breasts (about 1.5 lbs / 680g)
- 1/4 cup (60ml) fresh lemon juice (about 2 lemons)
- Zest of 1 lemon
- 2 cloves garlic, minced
- 1/4 cup (15g) fresh parsley, chopped
- 1/4 cup (15g) fresh basil, chopped
- 1 teaspoon (5g) salt
- 1/2 teaspoon (2g) black pepper
- 1/4 teaspoon (1.5g) red pepper flakes (optional)
- 2 tablespoons (30ml) olive oil
Instructions:
- Whisk together lemon juice, lemon zest, garlic, parsley, basil, salt, pepper, red pepper flakes, and olive oil in a mixing bowl.
- Place chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it’s well coated. Seal the bag or cover the dish and refrigerate for 30 minutes.
- Heat the grill to medium-high heat.
- Remove chicken from the marinade (discard the marinade). Place chicken on the grill; cook for 5-7 minutes per side. Use a meat thermometer to check for doneness; it should read 165°F (74°C).
- Let the chicken rest for 5 minutes before slicing. Serve with your favorite sides and enjoy!
