Ingredients:

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680g)
  • 1/4 cup (60ml) fresh lemon juice (about 2 lemons)
  • Zest of 1 lemon
  • 2 cloves garlic, minced
  • 1/4 cup (15g) fresh parsley, chopped
  • 1/4 cup (15g) fresh basil, chopped
  • 1 teaspoon (5g) salt
  • 1/2 teaspoon (2g) black pepper
  • 1/4 teaspoon (1.5g) red pepper flakes (optional)
  • 2 tablespoons (30ml) olive oil

Instructions:

  1. Whisk together lemon juice, lemon zest, garlic, parsley, basil, salt, pepper, red pepper flakes, and olive oil in a mixing bowl.
  2. Place chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it’s well coated. Seal the bag or cover the dish and refrigerate for 30 minutes.
  3. Heat the grill to medium-high heat.
  4. Remove chicken from the marinade (discard the marinade). Place chicken on the grill; cook for 5-7 minutes per side. Use a meat thermometer to check for doneness; it should read 165°F (74°C).
  5. Let the chicken rest for 5 minutes before slicing. Serve with your favorite sides and enjoy!
