Ingredients:
- 3/4 cup extra virgin olive oil
- 1/4 cup fresh lemon juice
- 1 tbsp lemon zest
- 1 clove fresh garlic, finely minced
- 1/2 tsp dried oregano
- 1 tbsp fresh thyme or parsley, finely chopped
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 1 tsp raw honey or maple syrup
Instructions:
- Zest the lemons before juicing. Place the lemon zest, minced garlic, sea salt, and black pepper into a small glass mason jar or bowl.
- Allow the aromatics to sit for 2 minutes; the salt will draw out the moisture and oils from the garlic and zest.
- Pour the fresh lemon juice and your choice of sweetener (honey or maple syrup) over the aromatics.
- Slowly whisk the extra virgin olive oil into the base, pouring in a thin, steady stream until the liquid looks opaque and thickened. If using a jar, secure the lid and shake vigorously until the mixture is fully emulsified and velvety.
- Rest the dressing. Let it sit for 5 minutes until the flavors have fully melded together.
