Ingredients:

  • 3/4 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 clove fresh garlic, finely minced
  • 1/2 tsp dried oregano
  • 1 tbsp fresh thyme or parsley, finely chopped
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 tsp raw honey or maple syrup

Instructions:

  1. Zest the lemons before juicing. Place the lemon zest, minced garlic, sea salt, and black pepper into a small glass mason jar or bowl.
  2. Allow the aromatics to sit for 2 minutes; the salt will draw out the moisture and oils from the garlic and zest.
  3. Pour the fresh lemon juice and your choice of sweetener (honey or maple syrup) over the aromatics.
  4. Slowly whisk the extra virgin olive oil into the base, pouring in a thin, steady stream until the liquid looks opaque and thickened. If using a jar, secure the lid and shake vigorously until the mixture is fully emulsified and velvety.
  5. Rest the dressing. Let it sit for 5 minutes until the flavors have fully melded together.
