Ingredients:
- 1 cup (125g) all-purpose flour, spooned and leveled
- 1/2 teaspoon salt
- 1 cup (240ml) milk, whole or 2% (warmed slightly)
- 2 large eggs, at room temperature
- 2 tablespoons (30g) unsalted butter, melted, plus extra for greasing
Instructions:
- Preheat oven to 425°F (220°C). Generously grease popover pan with melted butter. Place the pan in the oven while it preheats.
- In a mixing bowl, whisk together the flour and salt.
- In a separate bowl, whisk together the warmed milk, eggs, and melted butter.
- Gradually add the wet ingredients to the dry ingredients, whisking until just combined. Do not overmix – a few lumps are okay.
- Carefully remove the preheated popover pan from the oven. Quickly fill each cup about halfway full with the batter.
- Immediately return the pan to the oven. Bake for 20 minutes at 425°F (220°C), then reduce the oven temperature to 350°F (175°C) and bake for another 10-15 minutes, or until golden brown and puffed.
- Remove from oven and let cool slightly in the pan for a few minutes. Gently remove the popovers from the pan and serve immediately.
