Ingredients:

  • 1 cup (125g) all-purpose flour, spooned and leveled
  • 1/2 teaspoon salt
  • 1 cup (240ml) milk, whole or 2% (warmed slightly)
  • 2 large eggs, at room temperature
  • 2 tablespoons (30g) unsalted butter, melted, plus extra for greasing

Instructions:

  1. Preheat oven to 425°F (220°C). Generously grease popover pan with melted butter. Place the pan in the oven while it preheats.
  2. In a mixing bowl, whisk together the flour and salt.
  3. In a separate bowl, whisk together the warmed milk, eggs, and melted butter.
  4. Gradually add the wet ingredients to the dry ingredients, whisking until just combined. Do not overmix – a few lumps are okay.
  5. Carefully remove the preheated popover pan from the oven. Quickly fill each cup about halfway full with the batter.
  6. Immediately return the pan to the oven. Bake for 20 minutes at 425°F (220°C), then reduce the oven temperature to 350°F (175°C) and bake for another 10-15 minutes, or until golden brown and puffed.
  7. Remove from oven and let cool slightly in the pan for a few minutes. Gently remove the popovers from the pan and serve immediately.
