Ingredients:

  • 1/4 cup (60 ml) fresh lime juice (about 2 limes)
  • 1/4 cup (60 ml) olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon honey (optional)
  • Salt and pepper to taste
  • 2 tablespoons fresh cilantro, chopped (plus more for garnish)
  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680g)

Instructions:

  1. In a mixing bowl, whisk together lime juice, olive oil, minced garlic, cumin, chili powder, honey (if using), salt, pepper, and cilantro.
  2. Place the chicken breasts in a plastic bag or shallow dish. Pour the marinade over the chicken
  3. Preheat your grill to medium-high heat (about 375°F - 400°F / 190°C - 200°C).
  4. Remove the chicken from the marinade, letting excess drip off. Place on the grill and cook for 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C).
  5. Remove chicken from the grill and let it rest for 5 minutes. Garnish with additional cilantro before serving.
