Ingredients:

  • 4 oz (115g) cooked lobster meat, roughly chopped
  • 1 tbsp (15ml) mayonnaise
  • 1 tsp (5ml) lemon juice
  • Pinch of sea salt
  • Freshly ground black pepper, to taste
  • 4 slices of brioche bread
  • 2 tbsp (30g) unsalted butter, softened
  • 4 oz (115g) Gruyere cheese, grated
  • 1 tbsp (15ml) fresh chives, finely chopped
  • 2 tbsp (30g) Monterey Jack cheese, shredded
  • 1 tbsp (15ml) pickled jalapenos, diced
  • 2 tbsp (30g) Fontina cheese, shredded
  • 1/4 tsp (1.25ml) truffle oil
  • 2 tbsp (30g) Provolone cheese, sliced
  • 1 tbsp (15ml) pesto
  • 2 oz (57g) Brie cheese, sliced
  • 1/4 of an apple, thinly sliced

Instructions:

  1. Prepare the Lobster Mixture: In a small bowl, combine the cooked lobster meat, mayonnaise, lemon juice, salt, and pepper. Gently mix until just combined.
  2. Assemble the Sandwich: For each twist, lay out two slices of bread. Evenly spread softened butter on one side of each slice. Flip the bread over, butter-side down, on your work surface.
  3. Add the Cheese and Lobster: Distribute the cheese evenly over the unbuttered sides of the bread. Top with the lobster mixture, dividing it equally between the two sandwiches. Sprinkle the chives or add other ingredients for different twists.
  4. Close the Sandwich: Top with the remaining slice of bread, butter-side up.
  5. Grill the Sandwich: Place the sandwich in the preheated skillet or griddle over medium heat. Cook for 3-5 minutes per side, or until the bread is golden brown and the cheese is melted and gooey. Gently press down on the sandwich with a spatula for even browning.
  6. Serve Immediately: Remove the sandwich from the skillet and let it cool for a minute or two before slicing in half. Serve immediately.
