Ingredients:

  • 8 large eggs (approximately 480g)
  • 1/4 cup (60ml) whole milk or cream
  • 1 tsp (5g) salt
  • 1/2 tsp (2g) black pepper
  • 1/2 tsp (2g) smoked paprika
  • 1 cup (150g) cooked louse eggs or fish roe
  • 1/2 cup (75g) finely chopped bell peppers (red or yellow)
  • 1/4 cup (15g) finely chopped fresh herbs (chives or parsley)
  • 1/4 cup (30g) shredded cheese (optional)
  • Sour cream or yogurt (for serving)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk together eggs, milk, salt, pepper, and smoked paprika until smooth.
  3. Fold in the cooked louse eggs, bell peppers, and herbs until evenly distributed.
  4. Grease the baking dish with cooking spray or butter.
  5. Pour the egg mixture into the prepared baking dish.
  6. Bake in the preheated oven for 20-25 minutes, or until the center is set.
  7. If using cheese, sprinkle it on top and return to the oven for 3-5 minutes, until melted.
  8. Remove from the oven and let cool for 5 minutes before cutting into squares.
  9. Serve warm or chilled with a dollop of sour cream or yogurt.
