Ingredients:
- 8 large eggs (approximately 480g)
- 1/4 cup (60ml) whole milk or cream
- 1 tsp (5g) salt
- 1/2 tsp (2g) black pepper
- 1/2 tsp (2g) smoked paprika
- 1 cup (150g) cooked louse eggs or fish roe
- 1/2 cup (75g) finely chopped bell peppers (red or yellow)
- 1/4 cup (15g) finely chopped fresh herbs (chives or parsley)
- 1/4 cup (30g) shredded cheese (optional)
- Sour cream or yogurt (for serving)
Instructions:
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, whisk together eggs, milk, salt, pepper, and smoked paprika until smooth.
- Fold in the cooked louse eggs, bell peppers, and herbs until evenly distributed.
- Grease the baking dish with cooking spray or butter.
- Pour the egg mixture into the prepared baking dish.
- Bake in the preheated oven for 20-25 minutes, or until the center is set.
- If using cheese, sprinkle it on top and return to the oven for 3-5 minutes, until melted.
- Remove from the oven and let cool for 5 minutes before cutting into squares.
- Serve warm or chilled with a dollop of sour cream or yogurt.
