- 1 cup (150g) chopped spinach
- ½ cup (75g) chopped onions
- 1 cup (100g) shredded cheese (e.g., cheddar or feta)
- 2 tablespoons (30ml) olive oil
- Salt and pepper to taste
- Fresh herbs (e.g., chives or parsley) - optional
Instructions:
- Preheat the oven to 375°F (190°C).
- Whisk together the speckled Sussex chicken eggs with milk or cream in a mixing bowl until fully combined.
- Season with salt and pepper.
- Heat the olive oil in a non-stick skillet over medium heat.
- Sauté the onions until translucent (about 3-4 minutes).
- Add the diced bell peppers and cook for another 3 minutes.
- Stir in the chopped spinach and cook until wilted.
- Pour the egg mixture into the skillet, gently stirring to combine with the vegetables.
- Sprinkle shredded cheese evenly on top.
- Cook on the stovetop for 2-3 minutes until the edges set.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the center is firm and lightly golden.
- Remove from the oven, garnish with fresh herbs if desired, and let cool slightly before slicing.
