Ingredients:

  • 113g unsalted butter
  • 125g all-purpose flour
  • 200g granulated sugar
  • 10g baking powder
  • 1.5g fine sea salt
  • 240ml whole milk
  • 5ml vanilla extract
  • 600g lemon pie filling
  • 6g fresh lemon zest
  • 15ml lemon juice
  • 15g sparkling sugar

Instructions:

  1. Preheat your oven to 350°F (175°C). Place the unsalted butter in a 9x13 inch baking dish and put it in the oven to melt. Remove once melted and bubbling, but before it browns.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and sea salt. Gradually pour in the milk and vanilla extract, whisking until the batter is smooth and thin.
  3. Pour the batter directly over the melted butter in the baking dish. Do not stir. Dollop the lemon pie filling evenly over the batter. Again, do not stir.
  4. Sprinkle the fresh lemon zest, lemon juice, and sparkling sugar over the top.
  5. Bake for 45 to 50 minutes until the crust has risen to the top and is a deep golden brown. The center should be set with a slight wobble from the filling.
