Ingredients:
- 113g unsalted butter
- 125g all-purpose flour
- 200g granulated sugar
- 10g baking powder
- 1.5g fine sea salt
- 240ml whole milk
- 5ml vanilla extract
- 600g lemon pie filling
- 6g fresh lemon zest
- 15ml lemon juice
- 15g sparkling sugar
Instructions:
- Preheat your oven to 350°F (175°C). Place the unsalted butter in a 9x13 inch baking dish and put it in the oven to melt. Remove once melted and bubbling, but before it browns.
- In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and sea salt. Gradually pour in the milk and vanilla extract, whisking until the batter is smooth and thin.
- Pour the batter directly over the melted butter in the baking dish. Do not stir. Dollop the lemon pie filling evenly over the batter. Again, do not stir.
- Sprinkle the fresh lemon zest, lemon juice, and sparkling sugar over the top.
- Bake for 45 to 50 minutes until the crust has risen to the top and is a deep golden brown. The center should be set with a slight wobble from the filling.
