Ingredients:

  • 2 lbs Mixed Root Vegetables (Carrots, Parsnips, Sweet Potato), peeled and cut into roughly 1-inch chunks
  • 3 Tbsp Olive Oil, good quality
  • 1 tsp Coarse Sea Salt
  • ½ tsp Freshly Ground Black Pepper
  • ¼ cup Pure Maple Syrup
  • 1 Tbsp Fresh Thyme Leaves, stripped from the stem
  • ½ tsp Smoked Paprika
  • 1 tsp Apple Cider Vinegar

Instructions:

  1. Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
  2. In a large bowl, toss the prepared root vegetables with olive oil, salt, and pepper until evenly coated.
  3. Spread vegetables in a single layer on the prepared baking sheet. Roast for 20 minutes until they just start to soften.
  4. While the vegetables roast, whisk together the maple syrup, thyme leaves, smoked paprika, and apple cider vinegar in a small bowl until fully emulsified to create the glaze.
  5. Remove the tray from the oven. Drizzle half of the glaze evenly over the vegetables and toss gently on the tray. Return to the oven for another 10–15 minutes.
  6. Remove from the oven when tender throughout and nicely caramelized. Drizzle with the remaining glaze and serve immediately.
