Ingredients:
- 2 lbs Mixed Root Vegetables (Carrots, Parsnips, Sweet Potato), peeled and cut into roughly 1-inch chunks
- 3 Tbsp Olive Oil, good quality
- 1 tsp Coarse Sea Salt
- ½ tsp Freshly Ground Black Pepper
- ¼ cup Pure Maple Syrup
- 1 Tbsp Fresh Thyme Leaves, stripped from the stem
- ½ tsp Smoked Paprika
- 1 tsp Apple Cider Vinegar
Instructions:
- Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
- In a large bowl, toss the prepared root vegetables with olive oil, salt, and pepper until evenly coated.
- Spread vegetables in a single layer on the prepared baking sheet. Roast for 20 minutes until they just start to soften.
- While the vegetables roast, whisk together the maple syrup, thyme leaves, smoked paprika, and apple cider vinegar in a small bowl until fully emulsified to create the glaze.
- Remove the tray from the oven. Drizzle half of the glaze evenly over the vegetables and toss gently on the tray. Return to the oven for another 10–15 minutes.
- Remove from the oven when tender throughout and nicely caramelized. Drizzle with the remaining glaze and serve immediately.
