Ingredients:
- 1/2 cup (113g) shortening, softened
- 1/4 cup (57g) butter, softened
- 4 cups (480g) powdered sugar, sifted
- 1/4 teaspoon salt
- 1/2 teaspoon peppermint extract
- 2 tablespoons milk
- Red food coloring (gel or liquid)
Instructions:
- In a large bowl, cream together the softened shortening and butter with an electric mixer until light and fluffy.
- Gradually beat in the sifted powdered sugar, alternating with the salt, until a thick dough forms.
- Mix in the peppermint extract and milk until well combined.
- Divide the dough in half. Add red food coloring to one half, mixing until evenly colored.
- Wrap each half of the dough in plastic wrap and chill in the refrigerator for at least 1 hour, or until firm enough to handle.
- On a lightly powdered surface, roll out each half of the dough to about 1/4 inch thickness.
- Layer, twist, or marble the two colors together for a fun effect.
- Use cookie cutters or a knife to cut out desired shapes.
- Place the cut-out peppermints on a parchment-lined baking sheet or cutting board and chill in the refrigerator for another 30 minutes to 1 hour to firm up.
- Serve immediately or store in an airtight container in the refrigerator for up to 2 weeks.
