Ingredients:

  • 1 cup (120g) glutinous rice flour (mochi flour)
  • 1/4 cup (50g) granulated sugar
  • 3/4 cup (180ml) water
  • Cornstarch for dusting
  • 1 cup (240g) sweet red bean paste (anko)
  • Optional: 1/4 cup (60g) fresh fruit (e.g., strawberries, diced mango)

Instructions:

  1. Prepare the steamer by boiling water and lining the heatproof bowl with parchment paper.
  2. In a mixing bowl, combine glutinous rice flour and sugar.
  3. Gradually whisk in water until smooth and combined.
  4. Pour the dough mixture into the prepared steamer bowl.
  5. Cover with plastic wrap and steam for 15-20 minutes, or until translucent.
  6. Remove from the steamer and let cool for 10 minutes.
  7. Dust a clean surface with cornstarch and transfer the mochi dough.
  8. Divide the dough into equal portions and flatten each piece.
  9. Place a spoonful of red bean paste (or fruit) in the center of each flattened piece.
  10. Pinch the edges to seal and form a ball.
  11. Dust with more cornstarch to prevent sticking and serve as desired.
