Ingredients:
- 1 cup (120g) glutinous rice flour (mochi flour)
- 1/4 cup (50g) granulated sugar
- 3/4 cup (180ml) water
- Cornstarch for dusting
- 1 cup (240g) sweet red bean paste (anko)
- Optional: 1/4 cup (60g) fresh fruit (e.g., strawberries, diced mango)
Instructions:
- Prepare the steamer by boiling water and lining the heatproof bowl with parchment paper.
- In a mixing bowl, combine glutinous rice flour and sugar.
- Gradually whisk in water until smooth and combined.
- Pour the dough mixture into the prepared steamer bowl.
- Cover with plastic wrap and steam for 15-20 minutes, or until translucent.
- Remove from the steamer and let cool for 10 minutes.
- Dust a clean surface with cornstarch and transfer the mochi dough.
- Divide the dough into equal portions and flatten each piece.
- Place a spoonful of red bean paste (or fruit) in the center of each flattened piece.
- Pinch the edges to seal and form a ball.
- Dust with more cornstarch to prevent sticking and serve as desired.
