Ingredients:

  • 1/2 cup All-Purpose Flour (60g) for streusel
  • 1/4 cup packed Light Brown Sugar (50g) for streusel
  • 2 Tbsp Granulated Sugar (25g) for streusel
  • 1 tsp Ground Cinnamon (5g) for streusel
  • 4 Tbsp cold Unsalted Butter, cubed (57g) for streusel
  • 1/2 cup roughly chopped Walnuts (60g) for streusel
  • 3 medium Baking Apples, peeled, cored, and chopped (approx. 450g)
  • 1 tsp fresh Lemon Juice (5ml)
  • 1/2 tsp Ground Cinnamon (2g) for filling
  • 2 cups All-Purpose Flour (240g) for batter
  • 2 tsp Baking Powder (10g)
  • 1/2 tsp Fine Sea Salt (3g)
  • 1 cup (2 sticks) softened Unsalted Butter (227g) for batter
  • 1 cup Granulated Sugar (200g) for batter
  • 3 large Eggs, room temperature
  • 1 tsp Vanilla Extract (5ml)
  • 1/2 cup Whole Milk, room temperature (120ml)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and line the bottom of a 9-inch springform pan with parchment paper.
  2. Mix Dry Streusel: In a small bowl, combine the streusel flour, sugars, and cinnamon. Using your fingertips, cut the cold butter into the dry mixture until it resembles coarse crumbs. Stir in the chopped walnuts and place the mixture in the refrigerator to chill.
  3. Prepare the Apples: Toss the chopped apples with the lemon juice and 1/2 tsp of cinnamon. Set aside.
  4. Combine Dry Ingredients: Whisk the 2 cups of flour, baking powder, and salt together in a medium bowl. Set aside.
  5. Cream Butter and Sugar: In the bowl of an electric mixer, beat the softened butter and 1 cup granulated sugar on medium speed until light and fluffy (3–5 minutes).
  6. Add Eggs: Beat in the eggs, one at a time, mixing well after each addition. Scrape down the sides of the bowl. Add the vanilla extract.
  7. Alternate Dry and Wet: Reduce the mixer speed to low. Alternately add the dry ingredients and the milk, beginning and ending with the dry mixture. Mix only until the last streaks of flour disappear. Do not overmix!
  8. Assemble Layers: Pour roughly half of the cake batter into the prepared tin and spread evenly. Arrange the spiced apples evenly over the batter. Carefully spoon the remaining cake batter over the apples, gently spreading to cover the fruit.
  9. Apply Streusel and Bake: Remove the chilled streusel mixture and sprinkle it generously over the top of the cake. Bake for 55–65 minutes, or until a skewer inserted into the center comes out clean.
  10. Cool: Allow the cake to cool in the tin on a wire rack for at least 30 minutes before carefully releasing the springform sides. Cool completely before slicing for best structure.
