Ingredients:

  • 1/4 cup (60 ml) olive oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon kosher salt
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 4 boneless, skinless chicken breasts (about 1.5 lbs or 680 g)
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for garnish)

Instructions:

  1. In a mixing bowl, whisk together all marinade ingredients until well combined.
  2. Place chicken breasts in a sealable plastic bag or shallow dish. Pour the marinade over the chicken
  3. Heat the grill to medium-high (around 400°F or 200°C).
  4. Remove the chicken from the marinade and let excess marinade drip off. Place the chicken on the grill, cooking for 5-7 minutes per side. Cook until the internal temperature reaches 165°F (74°C) and juices run clear.
  5. Remove chicken from the grill and let rest for 5 minutes before slicing. Garnish with fresh parsley and serve with lemon wedges.
