Ingredients:

  • 1 cup (250g) crunchy or smooth peanut butter (preferably natural)
  • 1/2 cup (100g) brown sugar, packed
  • 1/4 cup (50g) granulated sugar
  • 1/4 cup (60ml) honey or maple syrup
  • 1 large (50g) egg
  • 1 teaspoon (5ml) vanilla extract
  • 1 cup (90g) protein powder (whey, pea, or your choice)
  • 1/2 teaspoon (2g) baking soda
  • A pinch of salt
  • 1/2 cup (90g) chocolate chips or chopped nuts (optional)

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine the peanut butter, brown sugar, granulated sugar, honey (or maple syrup), egg, and vanilla extract. Mix until smooth.
  3. Gradually add the protein powder, baking soda, and salt to the wet mixture. Stir until fully incorporated. Tip: If the dough is too dry, add a splash of water or milk to reach desired consistency.
  4. If using chocolate chips or nuts, fold them into the dough gently.
  5. Use a cookie scoop to portion out dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
  6. Flatten each cookie slightly using the back of a fork or your fingers for even baking.
  7. Bake for 10-12 minutes or until the edges are golden brown.
  8. Let cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
