Ingredients:
- 1 cup (250g) crunchy or smooth peanut butter (preferably natural)
- 1/2 cup (100g) brown sugar, packed
- 1/4 cup (50g) granulated sugar
- 1/4 cup (60ml) honey or maple syrup
- 1 large (50g) egg
- 1 teaspoon (5ml) vanilla extract
- 1 cup (90g) protein powder (whey, pea, or your choice)
- 1/2 teaspoon (2g) baking soda
- A pinch of salt
- 1/2 cup (90g) chocolate chips or chopped nuts (optional)
Instructions:
- Preheat oven to 350°F (175°C).
- In a mixing bowl, combine the peanut butter, brown sugar, granulated sugar, honey (or maple syrup), egg, and vanilla extract. Mix until smooth.
- Gradually add the protein powder, baking soda, and salt to the wet mixture. Stir until fully incorporated. Tip: If the dough is too dry, add a splash of water or milk to reach desired consistency.
- If using chocolate chips or nuts, fold them into the dough gently.
- Use a cookie scoop to portion out dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
- Flatten each cookie slightly using the back of a fork or your fingers for even baking.
- Bake for 10-12 minutes or until the edges are golden brown.
- Let cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
