Ingredients:
- 2 cups (180g) rolled oats
- 1 cup (120g) mixed nuts (e.g., almonds, walnuts, chopped)
- 1/2 cup (75g) dried fruit (e.g., cranberries, raisins, chopped apricots)
- 1/2 cup (125ml) honey or maple syrup
- 1/2 cup (115g) unsalted butter or coconut oil
- 1 tsp (5g) vanilla extract
- 1/2 tsp (2g) salt
- 1/2 tsp (2g) cinnamon (optional)
- 1/4 cup (30g) chia seeds or flaxseeds
- 1/4 cup (30g) dark chocolate chips (optional, for drizzle)
Instructions:
- Preheat oven to 350°F (175°C).
- Line the baking dish with parchment paper, leaving some overhang for easy removal.
- Melt butter (or coconut oil) and honey (or syrup) in a saucepan over low heat until combined.
- Remove the saucepan from heat and stir in vanilla extract.
- Combine oats, nuts, dried fruits, salt, and cinnamon in a mixing bowl.
- Pour the melted mixture over the dry ingredients and stir well to coat evenly.
- Transfer mixture to the baking dish and press down firmly.
- Bake for 20-25 minutes until edges are golden.
- Cool in the pan for 10 minutes, then lift out using parchment; cool completely on a wire rack.
- Cut into bars and enjoy!
