Ingredients:

  • 2 cups (180g) rolled oats
  • 1 cup (120g) mixed nuts (e.g., almonds, walnuts, chopped)
  • 1/2 cup (75g) dried fruit (e.g., cranberries, raisins, chopped apricots)
  • 1/2 cup (125ml) honey or maple syrup
  • 1/2 cup (115g) unsalted butter or coconut oil
  • 1 tsp (5g) vanilla extract
  • 1/2 tsp (2g) salt
  • 1/2 tsp (2g) cinnamon (optional)
  • 1/4 cup (30g) chia seeds or flaxseeds
  • 1/4 cup (30g) dark chocolate chips (optional, for drizzle)

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Line the baking dish with parchment paper, leaving some overhang for easy removal.
  3. Melt butter (or coconut oil) and honey (or syrup) in a saucepan over low heat until combined.
  4. Remove the saucepan from heat and stir in vanilla extract.
  5. Combine oats, nuts, dried fruits, salt, and cinnamon in a mixing bowl.
  6. Pour the melted mixture over the dry ingredients and stir well to coat evenly.
  7. Transfer mixture to the baking dish and press down firmly.
  8. Bake for 20-25 minutes until edges are golden.
  9. Cool in the pan for 10 minutes, then lift out using parchment; cool completely on a wire rack.
