Ingredients:
- 2 Large Eggs
- 1/2 cup Pure Maple Syrup or Honey
- 1 1/2 cups Milk of choice
- 1/4 cup Unsalted Butter, melted and cooled
- 1 tsp Pure Vanilla Extract
- 3 cups Old Fashioned Rolled Oats
- 1 tsp Baking Powder
- 1/2 tsp Ground Cinnamon
- 1/4 tsp Sea Salt
- 1 1/2 cups Fresh Blueberries
Instructions:
- Whisk the eggs, maple syrup, milk, melted butter, and vanilla extract in a large mixing bowl until the mixture is completely homogenous.
- Fold in the old fashioned rolled oats, baking powder, ground cinnamon, and sea salt. Let the batter sit for 5 minutes to allow the oats to hydrate.
- Gently fold in the fresh blueberries using a silicone spatula to avoid streaking the batter.
- Distribute the batter evenly among a standard 12-cup muffin tin lined with paper liners or coated with non-stick spray.
- Bake at 350°F (175°C) for 23–27 minutes until the edges are golden brown and the centers feel firm to the touch.
