Ingredients:

  • 2 Large Eggs
  • 1/2 cup Pure Maple Syrup or Honey
  • 1 1/2 cups Milk of choice
  • 1/4 cup Unsalted Butter, melted and cooled
  • 1 tsp Pure Vanilla Extract
  • 3 cups Old Fashioned Rolled Oats
  • 1 tsp Baking Powder
  • 1/2 tsp Ground Cinnamon
  • 1/4 tsp Sea Salt
  • 1 1/2 cups Fresh Blueberries

Instructions:

  1. Whisk the eggs, maple syrup, milk, melted butter, and vanilla extract in a large mixing bowl until the mixture is completely homogenous.
  2. Fold in the old fashioned rolled oats, baking powder, ground cinnamon, and sea salt. Let the batter sit for 5 minutes to allow the oats to hydrate.
  3. Gently fold in the fresh blueberries using a silicone spatula to avoid streaking the batter.
  4. Distribute the batter evenly among a standard 12-cup muffin tin lined with paper liners or coated with non-stick spray.
  5. Bake at 350°F (175°C) for 23–27 minutes until the edges are golden brown and the centers feel firm to the touch.
