Ingredients:
- 4 cups Mixed Salad Greens (400g)
- 2 medium Apples (300g)
- ½ cup Walnuts, roughly chopped (50g)
- ¼ cup Dried Cranberries or Raisins (40g)
- ¼ cup Crumbled Blue Cheese or Feta (optional) (50g)
- 3 tablespoons Olive Oil (45ml)
- 2 tablespoons Lemon Juice, freshly squeezed (30ml)
- 1 tablespoon Honey (20g)
- 1 teaspoon Dijon Mustard (5g)
- Salt and freshly ground Black Pepper to taste
Instructions:
- In a small skillet over medium heat, toast the walnuts for 3-5 minutes, stirring frequently, until fragrant and lightly browned. Be careful not to burn them! Remove from heat and let cool slightly.
- In a small bowl or jar, whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and pepper until emulsified. Give it a good shake if using a jar.
- In a large bowl, combine the salad greens, diced apples, toasted walnuts, dried cranberries (or raisins), and blue cheese (or feta), if using.
- Pour the honey-lemon vinaigrette over the salad and toss gently to combine. Be careful not to overdress – you want the ingredients to be lightly coated.
- Serve the salad immediately for the best texture and flavor.
