Ingredients:

  • 1 cup (100g) aged cheddar cheese, finely grated
  • ½ cup (50g) Gruyère cheese, finely grated
  • 1 tablespoon arrowroot powder or cornstarch
  • ½ teaspoon paprika
  • ¼ teaspoon black pepper
  • Pinch of salt
  • Fresh herbs (like chives or parsley), finely chopped

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Combine the grated cheddar, Gruyère, arrowroot powder, paprika, pepper, and salt in a mixing bowl.
  3. Scoop small mounds (about 1 tablespoon) of the mixture onto a lined baking sheet, spacing them 2 inches apart.
  4. Flatten each mound slightly with the back of a spoon.
  5. Bake in the preheated oven for 12-15 minutes or until golden brown and crispy.
  6. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
  7. Serve warm or at room temperature, optionally garnished with fresh herbs.
