Ingredients:
- 1 cup (100g) aged cheddar cheese, finely grated
- ½ cup (50g) Gruyère cheese, finely grated
- 1 tablespoon arrowroot powder or cornstarch
- ½ teaspoon paprika
- ¼ teaspoon black pepper
- Pinch of salt
- Fresh herbs (like chives or parsley), finely chopped
Instructions:
- Preheat the oven to 400°F (200°C).
- Combine the grated cheddar, Gruyère, arrowroot powder, paprika, pepper, and salt in a mixing bowl.
- Scoop small mounds (about 1 tablespoon) of the mixture onto a lined baking sheet, spacing them 2 inches apart.
- Flatten each mound slightly with the back of a spoon.
- Bake in the preheated oven for 12-15 minutes or until golden brown and crispy.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Serve warm or at room temperature, optionally garnished with fresh herbs.
